Leeks, like garlic, onions, shallots, and scallions belong to a vegetable family called the Allium vegetables. Leeks are not the most popular vegetable, but depending on how they are prepared, they can quickly become regular and popular at your dinner table.
Leeks have been around for a very long time, dating back to the ancient Romans and Greeks who were well aware of their health benefits. Leeks contain flavonoids and sulphur rich nutrients. They contain vitamins A and K as well as healthy amounts of folic acid, niacin, riboflavin, magnesium and thiamin. Lastly, leek stalks contain minerals such as iron, potassium, calcium, magnesium, maganese, zinc and selenium.
