I’m sure that we can all agree that Cucumbers are very refreshing to eat. Their very mild flavor allows them to go with just about everything, and you can use them in many different ways, for example in cold soups, tossed salads, and they are great for juicing and in sandwiches.
Cucumbers are scientifically known as Cucumis sativus and belong to the same botanical family as melons, including watermelon, cantaloupe and squashes – summer squash, winter squash, zucchini and pumpkin. Some classify cucumbers as fruit and some classify them vegetables. However, for this article I’ll classify them as vegetables.
Cucumbers contain lots of vitamins and minerals. Some of the vitamins are Vitamin K, Vitamin C and Vitamin B1, and some of the minerals are potassium, phosphorus, magnesium, manganese, copper and biotin. Cucumbers have many wonderful health benefits when used internally and externally.
