🥗 Cucumber and Mint Salad
Ingredients: 2 large cucumbers (thinly sliced), ¼ cup red onion (thinly sliced), ¼ cup fresh mint (chopped), 2 tbsp olive oil, 1 tbsp lemon juice, salt and pepper.
Method: Combine cucumbers, onion and mint. Drizzle with olive oil and lemon juice, season to taste, toss gently and serve chilled.
🥪 Cucumber Sandwiches
Ingredients: 1 large cucumber (thinly sliced), 225g cream cheese (softened), 1 tsp dill, 1 tbsp lemon juice, 8 slices wholegrain bread, salt and pepper.
Method: Mix cream cheese with dill, lemon juice and seasoning. Spread over bread slices. Layer cucumber on half the slices, top with remaining bread, cut into quarters and serve.
