Okra, also known as lady's finger or gumbo, is a warm-season vegetable known for its unique flavour and impressive nutritional profile. Easy to grow and prolific once established, okra is a fantastic addition to any kitchen garden.

Care and Harvesting

Watering: Okra needs consistent moisture, especially during flowering and pod development. Aim for about 1 inch of water per week via deep watering.

Harvesting: Pods should be harvested when 2–4 inches long, usually 5–7 days after flowering. Regular harvesting encourages more growth — do not leave pods to become large and tough.

💡 Tip: Wear gloves when harvesting okra — the plant has tiny spines that can irritate skin. The pods are best picked every 2–3 days during peak season.

Two Delicious Okra Recipes

🍳 Southern Fried Okra

Ingredients: 1 lb fresh okra (sliced), 1 cup cornmeal, ½ cup plain flour, 1 tsp salt, ½ tsp black pepper, oil for frying.

Method: Mix cornmeal, flour and seasoning. Dredge sliced okra in the mixture. Fry in batches in hot oil until golden brown and crispy. Drain on paper towels and serve hot.

🍲 Spicy Okra and Tomato Stew

Ingredients: 1 lb okra (cut into pieces), 2 cups diced tomatoes, 1 onion (chopped), 3 garlic cloves, 2 tbsp olive oil, 1 tsp cayenne, salt and pepper.

Method: Sauté onion and garlic in olive oil. Add tomatoes and spices, cook until softened. Stir in okra and simmer 15–20 minutes until tender. Serve over rice.
